what is being gluten-free?
In case you’re new to the gluten-free world, it basically means adhering to a diet that excludes gluten, a protein found in wheat, barley, rye, and their derivatives. This lifestyle choice is adopted for various reasons, including celiac disease, gluten sensitivity, or personal preference. Individuals following a gluten-free diet must avoid foods containing gluten, such as bread, pasta, and baked goods unless they find alternatives with gluten-free ingredients.

Yes, almonds are naturally gluten-free! In fact, almonds and almond products, such as almond flour or almond butter, do not contain gluten inherently. In this Gluten-Free Almond Tart, I’m using a gluten-free almond flour in the tart base and custard filling. It adds a nutty, and crumbly texture to this dessert that is super delicious!
can this almond tart be made with gluten?
It can! In fact, my GF almond tart is a variation from my almond puff recipe, which is traditionally used with all-purpose flour. As you can see, I changed the recipe name for this version to “tart” as the almond flour gives the base a “tart-like” consistency, versus a “puff” you’d get from a choux pastry dough.

How to make a gluten-free almond tart
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. This will prevent the tart from sticking and make cleanup a breeze.
In a food processor or using a pastry blender, pulse the cold butter, almond flour, water, and honey until the mixture resembles coarse crumbs. This will create a crumbly texture that holds together when pressed.
Press the crust mixture into a rectangle shape on the parchment paper-lined baking pan. Ensure it's evenly distributed and pressed firmly.
In a saucepan, bring the water and butter for the custard filling to a boil. Once boiling, remove from heat and stir in the almond flour until thickened. Then, stir in the almond extract and egg until fully incorporated and the mixture is spreadable.
Pour the almond custard filling over the tart crust, spreading it evenly with a spatula. Bake for 20-25 minutes, or until the filling is set and the top is golden brown.
While the tart is baking, prepare the almond glaze by mixing together the confectioners sugar, almond extract, and enough water to achieve a smooth and pourable consistency.
