What is the difference between a blondie and a congo bar?
Blondies and Congo bars share similarities as dense, chewy bar cookies - and to be quite frank, I’ve always considered this recipe a “blondie” - it was just always called “Congo Bar” growing up! What I did learn though, is that blondies are often with chocolate chips or nuts and Congo bars may include coconut flakes or oats along with chocolate chips and nuts, resulting in a slightly varied texture.

Preheat oven to 350-degrees
Mix and sift dry ingredients
Combine butter and sugar in a mixer
Add eggs, one by one until combined
Slowly pour in dry ingredients until combined

- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. butter
- 2 1/4 c. brown sugar
- 4 eggs
- 1 c. nuts optional
- 1 package chocolate chips optional
Instructions
- Preheat oven to 350-degrees
- Mix and sift dry ingredients
- Combine oil and sugar in a mixer
- Add eggs, one by one until combined
- Slowly pour in dry ingredients until combined
- Add in nuts and chocolate chips if desired
- Pour in a 9×13 pan and bake for 25 minutes until golden brown
