Mac & Cheese Ingredients

  • Elbow noodles

  • Evaporated milk

  • Cheddar cheese

  • Pepper-Jack cheese

  • Grated parmesan cheese

  • Broccoli

  • Panko breadcrumbs

  • Butter

  • Salt

  • Pepper

Making The Baked Mac & Cheese

  • Preheat oven to 350-degrees

  • Grease a 9×11 baking pan or 2 1/2 qt. casserole dish

  • Bring salted water to a boil in a large saucepan

  • Cook the macaroni according to the package instructions, adding in broccoli at the very end so they are slightly steamed; then drain

  • Combine macaroni, broccoli, cheese (only half the parmesan), evaporated milk, salt, and pepper in a big bowl.

  • Next, prepare your breadcrumbs. Combine melted butter, breadcrumbs and the remainder of parmesan in a small bowl; set aside.

  • Spread the macaroni mixture in a baking dish

  • Sprinkle breadcrumbs evenly over the top of the macaroni

  • Cover with foil and bake for 25 minutes

  • Uncover the macaroni and broil until the top is golden brown

Storing The Baked Broccoli Mac & Cheese

Considering this recipe makes a big ‘ole pan of baked broccoli mac and cheese, you’ll probably have plenty for leftovers. And to be honest, I think it even tastes better the next day! Simply store the leftovers in a glass or plastic container in the refrigerator – or wrap it up and freeze it for when you need a quick dinner!

It can be reheated in the microwave (if freezing, thaw it first) or oven at 350 until heated through.

Not a big broccoli fan? Then, feel free to omit it or add another favorite veggie.

For a less zippy version of this, you can swap out the pepper jack for Monterey jack!

  • 2 c. Cheddar cheese
  • 2 c. Pepper-Jack cheese
  • 1. c Grated parmesan cheese
