Tomato Cucumber Feta Cheese Salad
If you saw my post on pico de gallo, then you know I love using our garden veggies to whip up fresh and fun summer dishes. And this juicy tomato cucumber feta cheese salad is no exception! The perfect combination of sweet and savory from the vinaigrette and feta, and crisp and juicy from the veggies. Even better? This makes a great side dish for almost any summer meal – from burgers and grilled chicken, to sandwiches, and more! Even better that it’s healthy and quick to make! Tomato Cucumber Feta Cheese Salad Ingredients
Tomatoes
Cucumber
Onion
Feta cheese
Shop my kitchen
Olive oil
Red wine vinegar
Fresh dill
Sugar
Salt

Making the Salad
To make the vinaigrette, whisk olive oil, red wine vinegar, sugar, salt and pepper in a small bowl; set aside
Begin by dicing your tomatoes and placing in a medium-sized bowl
Next, peel and dice your cucumbers and place in the bowl
Thinly slice the red onion and add them to the bowl
Next, pour in the vinaigrette and toss veggies together
Then, dump in your feta and fold in to combine
Finally, toss in some fresh dill and chill until ready to serve
Serving Suggestions
This fresh and crisp tomato cucumber feta cheese salad serves beautifully with grilled chicken, over a gyro sandwich – or is even fabulous on its own! You can even serve it with pita chips if you’d like a healthy snack or appetizer for a party.
