Bacon Chive Cauliflower Mac ‘n Cheese
Listen, I’m always down for pasta — buuutt, in an effort to cut some carbs this summer, I came up with my own version of mac n’ cheese that’s equally as satisfying. So, I give you: Bacon Chive Cauliflower Mac ‘n Cheese! That’s quite the mouthful, isn’t it? Creamy, cheesy, and a little crispy from the salty bacon. Mmm! Cauliflower Mac ‘n Cheese Ingredients
Cauliflower
Butter
Flour
Milk
Garlic powder
Paprika
Ground mustard
Cream cheese
Cheddar cheese
Bacon
Chives

Making The Bacon Chive Cauli-Mac
Fry bacon until crispy; set aside
While bacon is cooking, boil a large pot of salted water; boil cauliflower pieces until tender; set aside
To make the cheese sauce, start with a roux in a separate pan: melt butter on medium heat and whisk in flour until it thickens slightly
Next, pour in milk and whisk until combined; allow it to simmer and thicken, about 3-5 minutes
Turn to medium-low and whisk in cream cheese until melted
Add in the cheddar and whisk until melted
Season with ground mustard, paprika, garlic powder and salt and pepper
Turn off heat and then mix in the cauliflower until all pieces are coated
To serve, sprinkle chopped bacon, additional cheddar, and chives as a garnish and enjoy!

- 1 cauliflower cut into florets
- 2 tbsp. butter
- 2 tbsp. flour
- 1 c. milk
- 1 tsp. garlic powder
- 1/4 tsp. paprika
- 1/2 tsp. ground mustard
- 2 oz. cream cheese
- 8 oz block cheddar cheese shredded
- 5 slices of bacon
- Chopped chives as garnish
- Salt & pepper to taste
